Grilled Sandhill Crane

Also known as the Ribeye of the Sky, Sandhill Crane makes for truly amazing table fare. With a consistency and flavour more akin to beef than to bird, this easy recipe tastes as good on the tailgate as it does served at the most formal dinner party


Sandhill Crane Breast
Olive oil

For the Rub:

  • 2 tbsp onion powder
  • 2 tbsp garlic powder
  • 3 tbsp ground pepper
  • 1 tbsp paprika
  • 2 tbsp kosher salt
  • 1 tbsp chili powder
  • 2 tbsp mustard powder

Mix all rub ingredients together thoroughly, then, on a plate brush olive oil on sandhill crane breast. Liberally coat breast in wild game rub ensuring meat is covered but rub is not caking off the breast. Next put the breast on a pre-heated grill and cook over high heat, searing the breast for 2-3 minutes per side until rare to medium rare.  (Around 130F).
